We don’t let people speak about others behind their backs. Then we do evaluations after two months and then every six months to see where they’re at. We’ve spent time making sure our staff have good relationships so that they can tell each other and senior staff any problems. The person that has been disrespected will not be present. We believe that person is allowed to speak their case, not during the working hour, but the next day in a sit-down meeting with management. None of this behaviour is allowed, and immediate dismissal from the evening service will happen. Calling out problematic behaviour (such as racism, sexism or homophobia)… People do as they are shown, therefore we do not raise our voices or act in a disrespectful manner ourselves. When they are crossed it is easy to see where fault lays. We have rules agreed when you start, rules stating when and how we speak to each other which encourage respect. If not, then they have to write on the Swift thread that they got home safely. Someone else is really into whisky so Bobby sits with him every week, showing him how to buy from auctions, and so on. We have one guy who is now spending time with me on the side learning about marketing and branding. We try to figure out what their dreams are, and how we can help them with that. Opportunities to progress… We make sure new starters have someone to learn from and are making drinks in front of someone more experienced, so that if they make it wrong, they’ll know for next time and won’t be scared. Everything is addressed on the night, out the back or after service. We don’t believe in slapping hands or making somebody feel stupid in front of guests. If there’s a review that mentions someone in particular, we’ll shout that out and say great job, or if we come in and see that the bar has been well cleaned, we’ll send a picture of it to the group saying well done. TRAINING, CAREER PROGRESSION & FEEDBACK Praise… They have staff food and they are more than welcome to have a staff beer after hours but most of the time they go home. When new staff members join, we make sure that someone senior takes them out for a drink.

We work on people being friends and we have 3 staff parties a year. It’s so important to make people feel they are part of the bar, so that they’re not just working for a machine but contributing to building something.

Can they open the door? Can they research a particular product for the menu? That way they get full credit for it and everyone knows that. The best way to keep staff is to make things very clear and to give them one specific routine or task that is just theirs.
